SCA Brewing Foundation

Whether you only ever brew coffee at home or want to introduce brewed coffee to your cafe menu, the Brewing Foundation course will introduce you to the techniques and theory needed to get the best out of a range of brew methods.

We look at the differences between Immersion and Percolation brewers. As well as a range of filtration methods and work towards developing working recipes and techniques.

We also introduce you to the use of a digital refractometer and the SCA Brew Control Chart – the fundamental technique used by all serious coffee professionals to manage their brews.

The course is globally accredited via the Speciality Coffee Association (SCA) – if you take the optional SCA Certified Exam, you earn 5 points towards your SCA Coffee Skills Programme.

Please allow an additional hour if you choose to take the SCA Certified Exam.

About this Event

As one of the world's largest commodities, it is vital that we look closely for the opportunities to improve the livelihoods of those who produce the coffee we consume.

Jessie May from Raw Material will be discussing development through trade in Colombia, with a direct focus on the profits received by the producers that are enjoyed at the consumer end of the value chain. This will be an informative look into what drives the market, and how this information can be used to provide stable and vital profits for coffee farmers.

The talk will be followed by a tasting of Colombian coffees, who receive on average 2.5x the annual profits through working with Raw Material.

Once suitably caffeinated, there will be beer and pizza to wash the knowledge down with.

On this course you will have lots of opportunity to refine your tasting and brewing skills.

We extensively use the SCA Brew Control Chart system to understand and refine our brews, ensuring that we are properly extracting our coffee and optimising flavour. At this level you will start to clearly understand how to manipulate the Strength and Extraction of brews and the effects on flavour.

You will experiment with multiple variables – grind size, water temperature, contact time, agitation/turbulence and brew method. We will also look at water chemistry and consider which filter methods are best for each context.

Candidates entering this course should have a general understanding of brewing – SCA Foundation Brewing or SCA Introduction to Coffee would be good starting points.

The course is globally accredited via the Speciality Coffee Association (SCA).

A significant progression from Foundation level, this course is designed to get attendees to the level of a skilled, working Speciality Barista.

We look closely at taste and flavour, and how we can manipulate these using brew recipes (dose, output, time and water temperature). With the use of a digital refractometer, you will see how different brew recipes can optimise any coffee – a huge competitive advantage to any cafe or Barista.

We will also look closely at workflow, ensuring that you work to maximise quality, consistency and speed. If you have ambitions to work as a Speciality Barista, this course is your benchmark and will greatly accelerate your learning curve and skill set.

Candidates entering this course should have a general understanding of espresso technique – SCA Foundation Barista or 3+ months of work experience would be ideal for this.

This is the perfect class for you if you are thinking about becoming a barista, or just want to learn more about espresso based coffee.

Working on top level professional equipment you’ll learn the basics of consistent dosing and tamping, grind adjustment, and tasting. You’ll go on to learn how to steam and pour milk to produce attractive and creamy-textured Flat Whites, Lattes and Cappuccinos.

The class is designed to quickly familiarise you with espresso machinery so that you are fast and neat with your presentation of espresso based drinks. You will finish the day able to make the full Espresso-based menu, confident in the use of grinder and machine.
