The Story:

Sensible Coffee kindly asked me back n September if I could host one of three cuppings happening throughout the UK for the Best of Geisha Colombia by WALA Coffee Curators. The auction took place on Tuesday 19th September at 10:00am and had coffee buyers from all over the world bidding on their favourite lot’s. I was very happy to come away with Lot 17, called ‘EFERVESCENCIA’ . Which means, the property of forming bubbles: the action or process of effervescing.

The Córcega farm is the centre of Sebastian's coffee project, a coffee enthusiast who is the 4th generation of a coffee family. With more than 14 years of experience in the coffee sector, together with his family, he consolidated a project focused on specialty coffees in 5 coffee farms in Quindío, seeking innovation through experimentation in post-harvest processes, such as carbonic fermentation. They grow different varieties such as Geisha, Wush Wush, Sidra , Borbone Rosado and SL28 among others.

Wush Wush is known to be a heirloom varietal, named after the place it was first discovered. Like Geisha, Wush Wush originates from a small area – Wushwush (one word) – in the Southwest of Ethiopia. The varietal like Gesha, made its way to South America; where the fertile soils and high altitudes of Colombia provide an ideal growing conditions for the crop. The varietal is known to possess a good tolerance to a range of climates but produces a low yield. Wush Wush is prone to adapt and change, with tree morphology varying significantly: meaning that, when farmers wish to replant, mature tree selection is required in order to ensure a consistent crop.

Carbonic Fermentation: After selecting the best cherries from the harvest, a carbonic fermentation is carried out in a plastic tank, where cherries are inoculated with their own Mosto (Lixiviado).
